- 150g sturdy corn tortilla chips
- 75g shredded Monterey Jack cheese
- 75g shredded sharp Cheddar cheese
- 20g pickled jalapeños, patted dry
- 1 medium scallion, finely sliced
- 1/4 cup canned black beans, rinsed and dried
Instructions:
- Spread half of the tortilla chips across a large microwave-safe plate in a single layer to maximize surface area.
- Sprinkle half of the Monterey Jack and Cheddar cheese blend evenly over the base layer of chips.
- Distribute the dried jalapeños and black beans over the cheese, then top with the remaining chips and the rest of the cheese blend.
- Microwave on high for 45 seconds. Continue in 15-second bursts until the cheese is glossy and fully melted (usually 60-90 seconds total).
- Immediately garnish with sliced scallions and serve while hot.
