Ingredients:

  • 150g sturdy corn tortilla chips
  • 75g shredded Monterey Jack cheese
  • 75g shredded sharp Cheddar cheese
  • 20g pickled jalapeños, patted dry
  • 1 medium scallion, finely sliced
  • 1/4 cup canned black beans, rinsed and dried

Instructions:

  1. Spread half of the tortilla chips across a large microwave-safe plate in a single layer to maximize surface area.
  2. Sprinkle half of the Monterey Jack and Cheddar cheese blend evenly over the base layer of chips.
  3. Distribute the dried jalapeños and black beans over the cheese, then top with the remaining chips and the rest of the cheese blend.
  4. Microwave on high for 45 seconds. Continue in 15-second bursts until the cheese is glossy and fully melted (usually 60-90 seconds total).
  5. Immediately garnish with sliced scallions and serve while hot.
