Ingredients:
- 1.5 lbs Yukon Gold potatoes, diced into 1/2-inch cubes
- 1 tablespoon Extra Virgin Olive Oil
- 1 teaspoon Smoked Paprika
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- 1/2 teaspoon Sea Salt
- 1/4 teaspoon Cracked Black Pepper
- 1/2 small Yellow Onion, finely diced
- 1/2 Bell Pepper, diced
- 1 tablespoon fresh Parsley, chopped
Instructions:
- Cut 1.5 lbs of Yukon Golds into 1.27 cm (1/2 inch) cubes.
- Wash the cubes under cold water until the water runs clear.
- Use paper towels or a clean kitchen towel to remove every drop of moisture.
- Toss the dry potatoes in a bowl with 1 tablespoon olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Fold in 1/2 diced yellow onion and 1/2 diced bell pepper.
- Set your air fryer to 200°C (400°F) for 3 minutes to preheat.
- Spread the potatoes in an even layer in the air fryer basket. Cook for 10 minutes.
- Pull the basket out and give it a vigorous shake.
- Slide back in and cook for another 10 minutes until golden and crackling.
- Toss with 1 tablespoon fresh parsley immediately while the potatoes are hot.
