Ingredients:

  • 1 cup (240ml) water
  • 1/2 cup (115g) unsalted butter, cubed
  • 1 tbsp (15g) granulated sugar
  • 1/4 tsp salt
  • 1 cup (125g) all-purpose flour, sifted
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1/4 cup (50g) granulated sugar
  • 1 tbsp ground cinnamon
  • 2g cooking spray (avocado or coconut oil)

Instructions:

  1. In a medium saucepan, combine water, butter, 1 tablespoon of sugar, and salt. Bring to a rolling boil over medium-high heat.
  2. Once the butter is fully melted, add the sifted flour all at once. Stir vigorously with a wooden spoon until a dough ball forms and a thin film develops on the bottom of the pan, approximately 2 minutes.
  3. Remove the pan from heat and let the mixture cool for 5 minutes to ensure the egg does not scramble upon contact.
  4. Add the egg and vanilla extract to the cooled dough. Beat vigorously until the mixture transforms from separated pieces into a smooth, glossy, and thick paste.
  5. Transfer the dough to a piping bag fitted with a large star tip. Lightly grease the air fryer basket with cooking spray.
  6. Pipe 3 to 4-inch strips directly into the basket, using kitchen shears to snip the dough at the end of each strip. Space them 1 inch apart to allow for airflow.
  7. Air fry at 400°F (200°C) for 10 minutes or until the exterior is mahogany-colored and crisp. Immediately toss in the cinnamon-sugar mixture while warm.
