Ingredients:

  • 1 lb pork sausage
  • 1/2 lb thick-cut bacon, diced
  • 1 medium yellow onion, finely diced
  • 9 large eggs
  • 2 cups small curd cottage cheese (4% milkfat)
  • 2 cups shredded sharp cheddar cheese
  • 2 cups shredded swiss cheese
  • 30 oz shredded hash browns, thawed and patted dry
  • 1/2 tsp salt
  • 1/2 tsp coarsely ground black pepper
  • 1/4 tsp garlic powder

Instructions:

  1. Preheat your oven to 350°F and grease your 9x13 pan generously. In your skillet, cook the pork sausage and diced bacon over medium heat. Cook until the sausage is browned and the bacon is starting to crisp.
  2. Add the diced onion in the last 5 minutes so it softens in the rendered fat.
  3. In your largest bowl, whisk the 9 large eggs until no streaks of white remain. Stir in the 2 cups of cottage cheese, both the cheddar and swiss cheeses, and your salt, pepper, and garlic powder. Whisk until the cheeses are evenly distributed through the egg liquid.
  4. Fold the 30 oz of thawed hash browns into the egg mixture. Once combined, add the cooked meat and onion mixture (drain the excess grease first!). Stir gently to ensure the meat doesn't all sink to the bottom. Pour the whole mess into your prepared baking dish.
  5. Bake for 35 minutes until the top is deeply golden and the center doesn't jiggle when you gently shake the pan. If the edges are browning too fast, tent it with foil for the last 10 minutes. Let it sit for 10 minutes before you even think about grabbing a knife.
