Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1 tsp (5g) baking powder
  • 1/2 tsp (3g) salt
  • 1 tbsp (8g) ground cinnamon
  • 1/2 tsp (1g) ground nutmeg
  • 1/2 cup (115g) vegetable oil
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (170g) grated zucchini
  • 1 1/2 cups (220g) peeled and diced firm apple
  • 1/2 cup (60g) chopped walnuts

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
  2. Grate the zucchini using the medium holes of a box grater. Dice the apples into uniform 1/4-inch cubes.
  3. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In a large bowl, beat the vegetable oil and sugar together, then whisk in the eggs and vanilla until pale and smooth.
  5. Pour the dry ingredients into the wet ingredients and gently fold using a spatula until just combined.
  6. Fold in the grated zucchini, diced apples, and chopped walnuts.
  7. Pour batter into the prepared pan and bake for 60 minutes or until a toothpick comes out clean.
