Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) salt
- 1 tbsp (8g) ground cinnamon
- 1/2 tsp (1g) ground nutmeg
- 1/2 cup (115g) vegetable oil
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (170g) grated zucchini
- 1 1/2 cups (220g) peeled and diced firm apple
- 1/2 cup (60g) chopped walnuts
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
- Grate the zucchini using the medium holes of a box grater. Dice the apples into uniform 1/4-inch cubes.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In a large bowl, beat the vegetable oil and sugar together, then whisk in the eggs and vanilla until pale and smooth.
- Pour the dry ingredients into the wet ingredients and gently fold using a spatula until just combined.
- Fold in the grated zucchini, diced apples, and chopped walnuts.
- Pour batter into the prepared pan and bake for 60 minutes or until a toothpick comes out clean.
