Ingredients:
- 3 large overripe bananas (approx. 340g)
- 1/2 cup (115g) unsalted butter, melted
- 3/4 cup (150g) brown sugar, packed
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 3/4 cup (85g) chopped walnuts, toasted
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or non-stick spray, then line the bottom with parchment paper.
- In a large mixing bowl, mash the bananas using a fork until they reach a smooth consistency. Stir in the melted butter, brown sugar, egg, and vanilla extract until fully emulsified.
- Whisk together the flour, baking soda, salt, and cinnamon in a separate small bowl. Gently fold the dry ingredients into the banana mixture using a spatula until no streaks of flour remain. Fold in the toasted walnuts.
- Pour the batter into the prepared pan and smooth the top. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
