Ingredients:

  • 3 large overripe bananas (approx. 340g)
  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) brown sugar, packed
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 3/4 cup (85g) chopped walnuts, toasted

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or non-stick spray, then line the bottom with parchment paper.
  2. In a large mixing bowl, mash the bananas using a fork until they reach a smooth consistency. Stir in the melted butter, brown sugar, egg, and vanilla extract until fully emulsified.
  3. Whisk together the flour, baking soda, salt, and cinnamon in a separate small bowl. Gently fold the dry ingredients into the banana mixture using a spatula until no streaks of flour remain. Fold in the toasted walnuts.
  4. Pour the batter into the prepared pan and smooth the top. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  5. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
