Ingredients:

  • 4 thick slices (approx. 8 oz / 225g) banana bread
  • 2 large eggs
  • ¼ cup (60ml) whole milk
  • 1 tsp (5ml) pure vanilla extract
  • ½ tsp (2g) ground cinnamon
  • ⅛ tsp (1g) salt
  • 2 tbsp (28g) unsalted butter
  • 1 tsp (5ml) neutral oil

Instructions:

  1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and salt vigorously until the mixture is uniform and no streaks of egg white remain.
  2. Dip each slice of banana bread into the custard, pressing down gently for about 10–15 seconds per side to allow the custard to penetrate without oversaturating the bread.
  3. Heat the butter and oil in a skillet over medium heat until the butter foams and begins to smell nutty.
  4. Place the slices in the pan and cook for 3–4 minutes per side until a deep, mahogany-colored crust forms and the center feels firm when pressed with a spatula.
