Ingredients:
- 4 thick slices (approx. 8 oz / 225g) banana bread
- 2 large eggs
- ¼ cup (60ml) whole milk
- 1 tsp (5ml) pure vanilla extract
- ½ tsp (2g) ground cinnamon
- ⅛ tsp (1g) salt
- 2 tbsp (28g) unsalted butter
- 1 tsp (5ml) neutral oil
Instructions:
- In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and salt vigorously until the mixture is uniform and no streaks of egg white remain.
- Dip each slice of banana bread into the custard, pressing down gently for about 10–15 seconds per side to allow the custard to penetrate without oversaturating the bread.
- Heat the butter and oil in a skillet over medium heat until the butter foams and begins to smell nutty.
- Place the slices in the pan and cook for 3–4 minutes per side until a deep, mahogany-colored crust forms and the center feels firm when pressed with a spatula.
