- 2 cups (250g) whole wheat flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 2 tsp (10g) pumpkin pie spice
- 1/2 tsp (3g) fine sea salt
- 1/2 cup (120ml) unsweetened pumpkin puree
- 1 medium (115g) ripe banana, mashed
- 1 cup (140g) finely shredded zucchini
- 1/2 cup (120ml) maple syrup
- 1/3 cup (80ml) avocado oil
- 2 large (100g) eggs
- 1 tsp (5g) vanilla extract
- 1/2 cup (60g) chopped walnuts
- 1/2 cup (85g) dark chocolate chips
Instructions:
- Preheat your oven to 175°C (350°F) and grease a 9x5 inch loaf pan.
- In a medium bowl, whisk together the 250g whole wheat flour, baking soda, baking powder, pumpkin pie spice, and salt. Note: This ensures the leavening agents are evenly spread.
- In a separate large bowl, combine the mashed banana, 120ml pumpkin puree, and 140g shredded zucchini.
- Whisk in the maple syrup, avocado oil, eggs, and vanilla extract until the mixture is smooth.
- Pour the dry flour mixture into the wet ingredients.
- Using a silicone spatula, gently fold the batter until just combined. Note: Stop the moment the flour disappears to avoid a rubbery texture.
- Fold in the chopped walnuts and dark chocolate chips.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 60 minutes until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes before moving it to a wire rack.
