Ingredients:

  • 1.5 lbs chicken breast, cut into 1-inch cubes
  • 1/2 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp vegetable oil
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp Sriracha
  • 1 tsp honey
  • 2 stalks green onions, thinly sliced
  • 1 tsp toasted sesame seeds

Instructions:

  1. Pat the chicken breast cubes dry with paper towels to remove excess moisture and season them with salt and pepper.
  2. In a large bowl, whisk together the cornstarch and all-purpose flour. Toss the seasoned chicken cubes in the mixture until evenly coated, shaking off any excess powder.
  3. Cook the chicken using one of three methods: Pan-fry in vegetable oil over medium-high heat for 3-4 minutes per side; Air Fry at 400°F (200°C) for 10-12 minutes; or Bake on a parchment-lined sheet at 425°F (220°C) for 15-18 minutes until golden brown.
  4. In a separate bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, and honey until smooth.
  5. Immediately add the hot chicken to the sauce and toss quickly to coat. Garnish with sliced green onions and toasted sesame seeds.
