Ingredients:
- 1 lb (450g) top sirloin steak, thinly sliced against the grain
- 1 tbsp (15ml) soy sauce
- 1 tbsp (8g) cornstarch
- 1 tsp (5ml) toasted sesame oil
- 1/4 cup (60ml) beef broth
- 2 tbsp (30ml) soy sauce
- 1 tbsp (15ml) oyster sauce
- 1 tbsp (15ml) brown sugar
- 1 tsp (2g) cornstarch
- 1/2 tsp (1g) ground black pepper
- 2 tbsp (30ml) vegetable oil
- 2 large (300g) bell peppers, one red, one green, cut into 1-inch chunks
- 1 medium (110g) yellow onion, cut into chunks
- 3 cloves (9g) garlic, minced
- 1 tsp (2g) fresh ginger, grated
Instructions:
- In a medium bowl, toss the sliced beef with soy sauce, cornstarch, and sesame oil. Let it marinate for 10 minutes.
- In a small bowl, whisk together beef broth, 2 tablespoons soy sauce, oyster sauce, brown sugar, 1 teaspoon cornstarch, and black pepper until dissolved.
- Heat 1 tablespoon of vegetable oil in a skillet over high heat. Sear beef in batches for 1-2 minutes per side until browned. Remove beef to a plate.
- Reduce heat to medium. Add the remaining 1 tablespoon of oil. Stir-fry onions and bell peppers for 3-4 minutes until slightly softened. Stir in garlic and ginger for 30 seconds.
- Return seared beef and juices to the pan. Pour the sauce mixture over the beef and vegetables. Toss constantly for 1-2 minutes until the sauce thickens into a glossy glaze.
