Ingredients:

  • 1 lb (450g) top sirloin steak, thinly sliced against the grain
  • 1 tbsp (15ml) soy sauce
  • 1 tbsp (8g) cornstarch
  • 1 tsp (5ml) toasted sesame oil
  • 1/4 cup (60ml) beef broth
  • 2 tbsp (30ml) soy sauce
  • 1 tbsp (15ml) oyster sauce
  • 1 tbsp (15ml) brown sugar
  • 1 tsp (2g) cornstarch
  • 1/2 tsp (1g) ground black pepper
  • 2 tbsp (30ml) vegetable oil
  • 2 large (300g) bell peppers, one red, one green, cut into 1-inch chunks
  • 1 medium (110g) yellow onion, cut into chunks
  • 3 cloves (9g) garlic, minced
  • 1 tsp (2g) fresh ginger, grated

Instructions:

  1. In a medium bowl, toss the sliced beef with soy sauce, cornstarch, and sesame oil. Let it marinate for 10 minutes.
  2. In a small bowl, whisk together beef broth, 2 tablespoons soy sauce, oyster sauce, brown sugar, 1 teaspoon cornstarch, and black pepper until dissolved.
  3. Heat 1 tablespoon of vegetable oil in a skillet over high heat. Sear beef in batches for 1-2 minutes per side until browned. Remove beef to a plate.
  4. Reduce heat to medium. Add the remaining 1 tablespoon of oil. Stir-fry onions and bell peppers for 3-4 minutes until slightly softened. Stir in garlic and ginger for 30 seconds.
  5. Return seared beef and juices to the pan. Pour the sauce mixture over the beef and vegetables. Toss constantly for 1-2 minutes until the sauce thickens into a glossy glaze.
