Ingredients:

  • 1 large bunch curly kale (300g), stems removed and torn into 2-inch pieces
  • 1 tbsp olive oil (15ml)
  • 1/2 tsp fine sea salt (3g)
  • 2 tbsp nutritional yeast (10g)
  • 1/4 tsp garlic powder (1g)
  • 1/8 tsp smoked paprika (0.5g)

Instructions:

  1. Wash the kale thoroughly and dry it until it feels bone dry to the touch. Note: Water is the enemy of the shatter.
  2. Strip the leaves away from the thick center stems and tear them into 2 inch pieces.
  3. Dump the leaves into your largest bowl — give them room to move.
  4. Drizzle the olive oil over the top.
  5. Use your hands to massage the oil into every single fold for 2 full minutes until the leaves look dark and glossy.
  6. Sprinkle the salt, yeast, garlic, and paprika over the glossy leaves and toss again.
  7. Lay them on a parchment lined sheet, ensuring no two leaves are touching.
  8. Bake for 15 minutes until they shatter between your fingers.
  9. Let them cool on the tray for 3 minutes to finish the crisping process.
