Ingredients:
- 1/2 cup (65g) all-purpose flour
- 1/2 cup (100g) packed light brown sugar
- 1 tsp (2g) ground cinnamon
- 4 tbsp (57g) cold unsalted butter, cubed
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) granulated sugar
- 2 tsp (10g) baking powder
- 1/2 tsp (3g) salt
- 1/2 cup (120g) sour cream
- 2 large eggs (100g)
- 1/2 cup (115g) unsalted butter, melted and cooled
- 1 tsp (5ml) pure vanilla extract
- 1 1/2 cups (225g) fresh blueberries
Instructions:
- In a medium bowl, whisk together the flour, brown sugar, and cinnamon for the streusel.
- Add the cold, cubed butter to the streusel mixture. Use a pastry cutter or fork to work the butter in until the mixture resembles coarse sand with some pea-sized lumps. Set aside in the fridge.
- Preheat oven to 400°F (200°C) and line a standard 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until fully combined.
- In a separate bowl, whisk the sour cream, eggs, melted butter, and vanilla until the mixture is smooth and emulsified.
- Pour the wet ingredients into the dry ingredients. Using a spatula, fold gently until just combined; the batter should remain thick and slightly lumpy.
- Toss blueberries in a pinch of flour, then gently fold them into the batter using a spatula.
- Divide the batter evenly among the muffin liners, top each with a generous portion of the chilled streusel, and bake for 25 minutes.
