Ingredients:
- 2 lbs (900g) Granny Smith apples, peeled and thinly sliced
- 3 tbsp (42g) unsalted butter
- 1/4 cup (50g) light brown sugar
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 1 sheet (250g) frozen puff pastry, thawed
- 1 large egg
- 1 tbsp (15ml) water
- 1/2 cup (100g) granulated sugar
- 4 tbsp (56g) unsalted butter, cubed
- 1/4 cup (60ml) heavy cream
- 1/2 tsp (3g) flaky sea salt
Instructions:
- Melt the 3 tbsp of butter in a skillet over medium heat.
- Stir in the sliced apples, brown sugar, cinnamon, and salt.
- Cook for 5–7 minutes until the apples smell fragrant and look translucent, but aren't mushy. Remove from heat and let them cool for a few minutes.
- Roll the puff pastry onto a baking sheet lined with parchment.
- Score a 1 inch border around the edge with a knife. Note: Only cut halfway through the dough to create a wall for the fruit.
- Beat the egg and water together, then brush this mixture onto the border.
- Arrange the sautéed apples inside the border in an overlapping shingle pattern.
- Bake at 400°F (200°C) for 20–25 minutes until the edges are deeply golden brown and puffed.
- While it bakes, melt the granulated sugar in a saucepan over medium heat.
- Stir constantly until the sugar turns a deep amber liquid.
- Stir in the cubed butter until melted, then slowly pour in the heavy cream.
- Stir in the sea salt, remove from heat, and drizzle over the warm Caramel Apple Tart.
