  • 1.5 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 small yellow onion, finely diced
  • 1 clove garlic, minced
  • 10.5 oz Condensed Cream of Chicken Soup
  • 0.5 cup low sodium chicken broth
  • 1 cup Bisquick Heart Smart baking mix
  • 0.5 cup 1% milk
  • 1 large egg
  • 0.5 tsp dried thyme

Instructions:

  1. Preheat the oven to 200°C (400°F). Note: A hot oven is crucial for immediate leavening action.
  2. Sauté the onion in a skillet with a splash of oil until translucent and fragrant.
  3. Add the garlic and cook for 1 minute until the aroma fills the room.
  4. Stir in the chicken, frozen vegetables, soup, chicken broth, and dried thyme.
  5. Simmer the filling on the stove for 3-5 minutes until bubbling gently.
  6. Transfer the mixture into your 2 quart baking dish and spread it evenly.
  7. Whisk the egg and 1% milk together in a bowl until fully combined.
  8. Stir in the Bisquick baking mix until just moistened. Note: Lumps are fine; overmixing makes the crust tough.
  9. Pour the topping over the hot chicken mixture, spreading it to the edges.
  10. Bake for 30 minutes until the top is golden brown and a toothpick comes out clean.
