Ingredients:
- 2 cups cooked chicken breast, shredded or cubed
- 1.5 cups frozen mixed vegetables (peas, carrots, corn, green beans)
- 1 small yellow onion, finely diced
- 1 clove garlic, minced
- 10.5 oz Condensed Cream of Chicken Soup
- 0.5 cup low sodium chicken broth
- 1 cup Bisquick Heart Smart baking mix
- 0.5 cup 1% milk
- 1 large egg
- 0.5 tsp dried thyme
Instructions:
- Preheat the oven to 200°C (400°F). Note: A hot oven is crucial for immediate leavening action.
- Sauté the onion in a skillet with a splash of oil until translucent and fragrant.
- Add the garlic and cook for 1 minute until the aroma fills the room.
- Stir in the chicken, frozen vegetables, soup, chicken broth, and dried thyme.
- Simmer the filling on the stove for 3-5 minutes until bubbling gently.
- Transfer the mixture into your 2 quart baking dish and spread it evenly.
- Whisk the egg and 1% milk together in a bowl until fully combined.
- Stir in the Bisquick baking mix until just moistened. Note: Lumps are fine; overmixing makes the crust tough.
- Pour the topping over the hot chicken mixture, spreading it to the edges.
- Bake for 30 minutes until the top is golden brown and a toothpick comes out clean.
