Ingredients:

  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) vegetable oil
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (225g) grated zucchini (unpressed/moist)
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with oil or line it with parchment paper.
  2. Grate the zucchini using the medium holes of a box grater, leaving the moisture in the shreds.
  3. In a large mixing bowl, whisk together granulated sugar, vegetable oil, egg, and vanilla extract until smooth, then stir in the grated zucchini.
  4. Add the all-purpose flour, baking soda, salt, and ground cinnamon directly into the bowl. Stir with a spatula until just combined.
  5. Gently fold in the semi-sweet chocolate chips until evenly distributed.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the bread in the pan for 10 minutes before transferring it to a wire cooling rack.
