Ingredients:
- 1 cup (200g) granulated sugar
- 1/2 cup (115g) vegetable oil
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (225g) grated zucchini (unpressed/moist)
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with oil or line it with parchment paper.
- Grate the zucchini using the medium holes of a box grater, leaving the moisture in the shreds.
- In a large mixing bowl, whisk together granulated sugar, vegetable oil, egg, and vanilla extract until smooth, then stir in the grated zucchini.
- Add the all-purpose flour, baking soda, salt, and ground cinnamon directly into the bowl. Stir with a spatula until just combined.
- Gently fold in the semi-sweet chocolate chips until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the bread in the pan for 10 minutes before transferring it to a wire cooling rack.
