Ingredients:
- 2 cups (250g) all-purpose flour

- 1 tsp (2g) ground nutmeg
- ½ tsp (1g) ground ginger
- ¾ cup (170g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) grated zucchini, squeezed dry
- ½ cup (120ml) sour cream
- 8 oz (225g) full-fat cream cheese, softened
- ½ cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1 pinch (0.5g) salt
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13 inch pan and line the bottom with parchment paper.
- Grate the zucchini using the fine side of the grater, place the shreds in a clean kitchen towel, and squeeze firmly to remove excess water.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- In a large bowl, cream the softened butter and granulated sugar until the mixture looks pale and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and sour cream until the batter is velvety and smooth.
- Gradually stir the dry ingredients into the wet batter until combined.
- Fold in the squeezed dry zucchini shreds.
- Pour batter into the prepared pan and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before frosting.
- Prepare frosting by beating softened cream cheese and butter together, then mixing in powdered sugar, vanilla extract, and salt until smooth.
- Spread the frosting evenly over the cooled cake using an offset spatula.
