Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (245g) pumpkin purée (canned)
- ¾ cup (150g) granulated sugar
- ¼ cup (50g) brown sugar, packed
- ½ cup (120ml) vegetable oil
- 2 large eggs (100g)
- 1 tbsp (8g) pumpkin pie spice
- 1 tsp (6g) baking soda
- ½ tsp (3g) salt
- 1 cup (120g) fresh cranberries
- 1 tbsp (6g) orange zest
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) fresh orange juice
- ¼ tsp (1ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper.
- In a mixing bowl, whisk together the all-purpose flour, pumpkin pie spice, baking soda, and salt.
- In a second bowl, beat the eggs, pumpkin purée, vegetable oil, granulated sugar, and brown sugar until the mixture is smooth and glossy.
- Pour the wet ingredients into the dry ingredients. Stir with a spatula until just combined, then gently fold in the fresh cranberries and orange zest.
- Pour the batter into the prepared pan and bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire cooling rack to cool completely.
- Whisk together powdered sugar, fresh orange juice, and vanilla extract until smooth. Drizzle the glaze over the cooled loaf.
