Ingredients:
- 1 ripe avocado (approx. 150g)
- 1 tsp (5ml) fresh lemon juice
- 1 tbsp (15ml) extra-virgin olive oil
- 1/4 tsp (1.5g) sea salt
- 1/8 tsp (0.5g) cracked black pepper
- 2 slices (60g) sourdough or multigrain bread
- 1/4 tsp (0.5g) red pepper flakes
Instructions:
- Place the scooped avocado flesh into a small bowl. Use a fork to mash until the mixture is pale green and chunky, leaving a few small cubes for texture.
- Stir in the lemon juice, olive oil, salt, and pepper until combined but not completely smooth.
- Toast your bread slices until they are mahogany-colored and feel rigid to the touch. If using a skillet, sear with a tiny bit of butter or oil over medium-high heat for 2-3 minutes per side until the edges are golden brown.
- While the toast is still warm, spread the avocado mixture edge-to-edge using a knife, covering the crusts.
- Finish with a sprinkle of red pepper flakes for a hint of warmth.
