Ingredients:

  • 1 ripe avocado (approx. 150g)
  • 1 tsp (5ml) fresh lemon juice
  • 1 tbsp (15ml) extra-virgin olive oil
  • 1/4 tsp (1.5g) sea salt
  • 1/8 tsp (0.5g) cracked black pepper
  • 2 slices (60g) sourdough or multigrain bread
  • 1/4 tsp (0.5g) red pepper flakes

Instructions:

  1. Place the scooped avocado flesh into a small bowl. Use a fork to mash until the mixture is pale green and chunky, leaving a few small cubes for texture.
  2. Stir in the lemon juice, olive oil, salt, and pepper until combined but not completely smooth.
  3. Toast your bread slices until they are mahogany-colored and feel rigid to the touch. If using a skillet, sear with a tiny bit of butter or oil over medium-high heat for 2-3 minutes per side until the edges are golden brown.
  4. While the toast is still warm, spread the avocado mixture edge-to-edge using a knife, covering the crusts.
  5. Finish with a sprinkle of red pepper flakes for a hint of warmth.
