Ingredients:
- 1 ¼ cups (155g) all-purpose flour
- ½ tsp (3g) salt
- 1 tbsp (8g) granulated sugar
- ½ cup (115g) unsalted butter, chilled and cubed
- 4 tbsp (60ml) ice water
- 1 can (15 oz / 425g) pumpkin puree
- 3 large (175g) eggs
- ¾ cup (150g) packed brown sugar
- 1 tbsp (15ml) cornstarch
- 1 ½ tsp (6g) ground cinnamon
- ½ tsp (2g) ground ginger
- ¼ tsp (1g) ground cloves
- ½ tsp (3g) salt
- 12 oz (355ml) evaporated milk
Instructions:
- Combine flour, salt, and sugar in a food processor. Pulse in chilled butter until the mixture resembles coarse crumbs.
- Add ice water one tablespoon at a time, pulsing until the dough just begins to clump.
- Wrap the dough and refrigerate for 30 minutes. Roll into a 12-inch circle and press into a 9-inch deep dish pan, crimping the edges.
- In a large bowl, whisk together pumpkin puree, brown sugar, cornstarch, cinnamon, ginger, cloves, and salt until uniform in color.
- Beat in the eggs one at a time, ensuring each is fully incorporated.
- Slowly pour in the evaporated milk, whisking gently to avoid creating excess air bubbles.
- Pour the filling into the crust, filling it nearly to the brim.
- Place the pan on a baking sheet and bake at 425°F (218°C) for 15 minutes, then reduce heat to 350°F (175°C) for another 40–45 minutes until the center has a slight jiggle.
