Ingredients:
- 4 mahi mahi fillets (6 oz each)
- 3 tbsp unsalted butter, melted
- 1 tbsp neutral oil
- 1.5 tbsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried thyme
- 0.5 tsp cayenne pepper
- 1 tsp kosher salt
- 0.5 tsp cracked black pepper
- 1 lemon, cut into wedges
- 1 tbsp fresh parsley, chopped
Instructions:
- Pat the mahi mahi fillets with paper towels until completely dry on all sides.
- In a small mixing bowl, whisk together the smoked paprika, onion powder, garlic powder, dried oregano, dried thyme, cayenne pepper, salt, and black pepper.
- Brush both sides of each fillet generously with the melted unsalted butter.
- Dredge the fillets in the spice mixture, pressing the seasoning firmly into the flesh with your palms to create a thick, even coating.
- Heat a large cast-iron skillet over medium-high heat and add the neutral oil. Once the oil is shimmering and just starting to smoke, place the fish in the pan.
- Sear the fillets undisturbed for 3 to 4 minutes until the underside develops a dark, mahogany crust and edges are opaque.
- Carefully flip the fillets with a fish spatula. Cook for an additional 3 minutes until the internal temperature reaches 145°F and the fish flakes easily.
- Remove from heat and garnish with fresh lemon wedges and chopped parsley before serving.
