Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tsp (5g) baking soda
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (1g) ground nutmeg
- 1/2 tsp (3g) salt
- 1/2 cup (115g) unsalted butter, softened
- 2 large eggs, room temperature
- 1 cup (245g) pumpkin puree
- 1 tsp (5ml) vanilla extract
- 1 cup (225g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 2 tbsp (30ml) pure maple syrup
- 1 tbsp (15ml) heavy cream
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). In a medium bowl, whisk together the flour, sugar, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, cream the softened butter until pale, then beat in the eggs, pumpkin puree, and vanilla until the mixture is velvety and smooth.
- Gradually fold the dry ingredients into the wet mixture until just combined; do not overmix.
- Spoon the batter evenly into a lined 24-slot muffin tin, filling each slot about 2/3 full.
- Bake for 20–22 minutes until edges are golden-brown and a toothpick inserted in the center comes out clean.
- Allow cupcakes to cool completely on a wire rack.
- Prepare frosting by whipping 1 cup of butter until creamy, then slowly beating in powdered sugar, maple syrup, heavy cream, and vanilla on high for 2 minutes.
- Pipe the frosting onto the cooled cupcakes and garnish with sprinkles or candy corn.
