Ingredients:

  • 3 large Eggs
  • 1/2 cup Whole Milk
  • 1/2 cup All-Purpose Flour
  • 1/4 tsp Sea Salt
  • 1 tsp Pure Vanilla Extract
  • 1 pinch Ground Nutmeg
  • 3 tbsp Unsalted Butter

Instructions:

  1. Place a 10-inch cast iron skillet on the middle rack of the oven and preheat to 400°F (200°C).
  2. Once preheated, add 3 tablespoons of unsalted butter to the hot skillet. Allow it to melt and foam until golden and nutty, but remove before it browns excessively.
  3. In a high-speed blender, combine eggs, milk, flour, salt, vanilla, and nutmeg. Pulse on high for 30 seconds until the mixture is frothy and completely smooth.
  4. Carefully remove the hot skillet from the oven. Immediately pour the batter into the center of the melted butter.
  5. Return the skillet to the oven and bake for 15 minutes until the edges have climbed the sides of the pan and are dark golden brown.
