Ingredients:

  • 15 oz (425g) pure pumpkin puree
  • 1/2 cup (100g) packed light brown sugar
  • 1 tsp (5g) ground cinnamon
  • 1/2 tsp (2g) ground ginger
  • 1/4 tsp (1g) ground cloves
  • 1/2 tsp (3g) salt
  • 1 large egg (50g)
  • 1 cup (120g) all-purpose flour
  • 1 cup (90g) old-fashioned rolled oats
  • 1 cup (200g) packed light brown sugar
  • 1 tsp (5g) ground cinnamon
  • 1/2 cup (113g) unsalted butter, cold and cubed

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the pumpkin puree, brown sugar, cinnamon, ginger, cloves, salt, and egg until velvety and smooth.
  3. Pour the mixture into a greased baking dish, smoothing the top with a spatula.
  4. In a medium bowl, combine the flour, oats, brown sugar, and cinnamon.
  5. Add the cold, cubed butter. Using a pastry cutter or your fingers, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized lumps remaining.
  6. Sprinkle the topping evenly over the pumpkin base.
  7. Bake for 30 to 35 minutes until the edges are bubbling and the topping reaches a deep mahogany-brown color.
  8. Let the dessert rest for 15 minutes before serving to allow the filling to set.
