Ingredients:

- 1 tsp (2g) ground ginger
- ½ tsp (1g) ground cloves
- 1 cup (200g) granulated sugar
- 1 cup (245g) canned pumpkin puree
- ½ cup (120ml) neutral oil
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- ½ cup (65g) all-purpose flour
- ½ cup (100g) brown sugar, packed
- 1 tsp (5g) ground cinnamon
- 4 tbsp (55g) cold unsalted butter, cubed
- ½ cup (65g) powdered sugar
- 1 tbsp (15ml) pure maple syrup
- 1 tsp (5ml) milk
Instructions:
- Preheat oven to 325°F (160°C). Grease a 9x5 inch loaf pan and line with parchment paper.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and cloves.
- Combine the pumpkin puree, oil, sugar, eggs, and vanilla in the same bowl or a separate one, stirring until the batter is smooth.
- Fold the dry ingredients into the wet ingredients using a spatula until no streaks of flour remain; do not overmix.
- In a small bowl, combine the streusel flour, brown sugar, and cinnamon.
- Rub the cold, cubed butter into the sugar mixture using fingers or a fork until coarse, pea-sized crumbs form.
- Pour the pumpkin batter into the prepared pan and smooth the top.
- Evenly sprinkle the streusel crumbs over the surface, lightly pressing them into the batter.
- Bake for 60 minutes or until a toothpick comes out clean.
- Whisk powdered sugar, maple syrup, and milk together to create a glaze, then drizzle over the cooled bread.
