Ingredients:

  • 1 ¾ cups (210g) all-purpose flour
  • 1 tsp (5g) baking soda
  • ½ tsp (2.5g) salt
  • 2 tsp (5g) ground cinnamon
  • 1 tsp (2g) ground ginger
  • ½ tsp (1g) ground cloves
  • 1 cup (200g) granulated sugar
  • 1 cup (245g) canned pumpkin puree
  • ½ cup (120ml) neutral oil
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • ½ cup (65g) all-purpose flour
  • ½ cup (100g) brown sugar, packed
  • 1 tsp (5g) ground cinnamon
  • 4 tbsp (55g) cold unsalted butter, cubed
  • ½ cup (65g) powdered sugar
  • 1 tbsp (15ml) pure maple syrup
  • 1 tsp (5ml) milk

Instructions:

  1. Preheat oven to 325°F (160°C). Grease a 9x5 inch loaf pan and line with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and cloves.
  3. Combine the pumpkin puree, oil, sugar, eggs, and vanilla in the same bowl or a separate one, stirring until the batter is smooth.
  4. Fold the dry ingredients into the wet ingredients using a spatula until no streaks of flour remain; do not overmix.
  5. In a small bowl, combine the streusel flour, brown sugar, and cinnamon.
  6. Rub the cold, cubed butter into the sugar mixture using fingers or a fork until coarse, pea-sized crumbs form.
  7. Pour the pumpkin batter into the prepared pan and smooth the top.
  8. Evenly sprinkle the streusel crumbs over the surface, lightly pressing them into the batter.
  9. Bake for 60 minutes or until a toothpick comes out clean.
  10. Whisk powdered sugar, maple syrup, and milk together to create a glaze, then drizzle over the cooled bread.
