Ingredients:
- 1.5 cups all-purpose flour
- 0.5 tsp baking soda
- 0.5 tsp salt
- 1 tsp ground cinnamon
- 0.5 cup vegetable oil
- 1 cup packed brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1.5 cups grated zucchini
- 0.5 cup chopped walnuts
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- Grate zucchini using the large holes of a box grater; do not squeeze out the moisture.
- In a large bowl, whisk together the vegetable oil, brown sugar, egg, and vanilla extract until smooth.
- Stir the grated zucchini into the wet mixture.
- In a separate bowl, sift together the all-purpose flour, baking soda, salt, and ground cinnamon.
- Fold the dry ingredients into the wet mixture using a spatula just until no streaks of flour remain.
- Fold in the chopped walnuts.
- Pour the batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
