Ingredients:
- 1/2 cup (113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (200g) zucchini, finely grated
- 1/2 cup (45g) unsweetened cocoa powder
- 1/2 cup (65g) all-purpose flour
- 1/2 tsp (2g) baking powder
- 1/4 tsp (1.5g) salt
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Grate the zucchini using the finest holes on a box grater. Note: If it feels like a sponge, lightly press with a paper towel, but don't squeeze it dry.
- Whisk the melted butter and granulated sugar in a bowl.
- Beat in the egg and vanilla extract until the mixture looks glossy.
- Stir in the grated zucchini until it's evenly distributed.
- Sift in the cocoa powder, all purpose flour, baking powder, and salt.
- Stir gently with a spatula until no streaks of flour remain.
- Fold in the semi sweet chocolate chips.
- Pour the batter into your lined 8x8 inch pan and smooth the top.
- Bake at 350°F (175°C) for 28 minutes until the edges pull away from the sides.
- Insert a toothpick in the center. It should come out with a few moist crumbs, not wet batter.
