Ingredients:

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (200g) zucchini, finely grated
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Grate the zucchini using the finest holes on a box grater. Note: If it feels like a sponge, lightly press with a paper towel, but don't squeeze it dry.
  2. Whisk the melted butter and granulated sugar in a bowl.
  3. Beat in the egg and vanilla extract until the mixture looks glossy.
  4. Stir in the grated zucchini until it's evenly distributed.
  5. Sift in the cocoa powder, all purpose flour, baking powder, and salt.
  6. Stir gently with a spatula until no streaks of flour remain.
  7. Fold in the semi sweet chocolate chips.
  8. Pour the batter into your lined 8x8 inch pan and smooth the top.
  9. Bake at 350°F (175°C) for 28 minutes until the edges pull away from the sides.
  10. Insert a toothpick in the center. It should come out with a few moist crumbs, not wet batter.
