Ingredients:
- 1.5 lbs sirloin or ribeye steak, cut into 1-inch cubes
- 2 tbsp avocado oil or grapeseed oil
- 1 tsp kosher salt
- 1/2 tsp coarse black pepper
- 4 tbsp unsalted butter
- 6 cloves garlic, minced
- 1 tbsp fresh parsley, finely chopped
- 1/2 tsp red pepper flakes
Instructions:
- Pat the steak cubes with paper towels until they are completely dry. Season generously with kosher salt and coarse black pepper.
- Place a 12-inch cast iron skillet over high heat until it begins to smoke. Add the avocado oil.
- Add the steak bites to the skillet in a single layer, working in batches if necessary to avoid crowding. Let them sear undisturbed for 2 minutes to develop a deep brown crust.
- Reduce the heat to medium. Add the unsalted butter, minced garlic, and red pepper flakes to the pan.
- As the butter foams, use a spoon to baste the steak bites continuously for 1 minute. Garnish with fresh parsley and serve immediately.
