Ingredients:
- 1 lb fresh strawberries (approx. 24 medium berries)
- 10 oz high-quality dark chocolate (60% cacao bars or wafers)
- 2 oz white chocolate
- 2 tbsp finely crushed pistachios
Instructions:
- Wash the strawberries under cold water, keeping the green stems intact to serve as handles.
- Thoroughly pat each berry dry with a paper towel. Allow them to air-dry on a towel for 30 minutes until the surface is completely matte and moisture-free.
- Finely chop the dark chocolate. Place two-thirds of the chocolate in a heat-proof glass bowl.
- Melt two thirds of the chocolate in a bowl over simmering water, stirring until it's velvety and smooth.
- Remove from heat and stir in the remaining one-third of the chopped chocolate (the 'seed'). Stir until completely melted to temper the chocolate for a glossy finish.
- Hold a strawberry by the stem and dip it into the chocolate, swirling to coat. Lift and let excess chocolate drip off.
- Place the dipped berry on a baking sheet lined with parchment paper. Immediately sprinkle with crushed pistachios if desired.
- Melt the white chocolate and drizzle over the set dark chocolate for a high-contrast finish. Let berries sit at room temperature for 15 minutes to fully set.
