Ingredients:

  • 6 cups peeled and sliced Granny Smith or Honeycrisp apples
  • 1 tbsp lemon juice
  • 2 tsp ground cinnamon
  • 2 tbsp maple syrup
  • 1 tbsp cornstarch
  • 1 cup old-fashioned rolled oats
  • 1/2 cup almond flour
  • 1/4 cup coconut sugar
  • 1/4 tsp salt
  • 1/3 cup melted coconut oil

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss the sliced apples with lemon juice, 1 tsp cinnamon, maple syrup, and cornstarch until evenly coated.
  3. Transfer the apple mixture into a 9x9 inch baking dish, spreading them evenly.
  4. In a medium bowl, combine rolled oats, almond flour, coconut sugar, remaining 1 tsp cinnamon, and salt.
  5. Pour in the melted coconut oil and stir with a fork until the mixture forms small, pea-sized clumps.
  6. Sprinkle the topping evenly over the apples, leaving a small space at the edges.
  7. Bake for 35–40 minutes until the topping is deep golden brown and juices are bubbling.
  8. Remove from oven and let rest for 10 minutes to allow the filling to set.
