Ingredients:
- 2 cups (180g) Rolled Oats
- ½ cup (60g) Almond Flour
- 1 tsp (5g) Baking Soda
- 1 tsp (2g) Ground Cinnamon
- ½ tsp (3g) Salt
- 2 large (110g) Eggs
- ½ cup (120g) Plain Greek Yogurt
- 2 ripe (220g) Mashed Bananas
- ¼ cup (60ml) Pure Maple Syrup
- 1 tsp (5ml) Vanilla Extract
- 1 tbsp (15ml) Melted Coconut Oil
- ½ cup (75g) Fresh Blueberries
- ¼ cup (30g) Chopped Walnuts
Instructions:
- Preheat your oven to 350°F (175°C). Line your muffin tin with silicone liners or grease them thoroughly.
- Blend the rolled oats in a food processor until they reach a coarse, flour-like consistency.
- In a large bowl, whisk together the oat flour, almond flour, baking soda, cinnamon, and salt.
- In a separate bowl, beat the eggs, then stir in the mashed bananas, Greek yogurt, maple syrup, vanilla, and melted coconut oil until the mixture is smooth and creamy.
- Pour the wet ingredients into the dry ingredients and fold with a spatula until just combined—do not overmix.
- Gently fold in the blueberries and walnuts.
- Scoop the batter into the muffin tins, filling each about ¾ full.
- Bake for 22-25 minutes until a toothpick inserted in the center comes out clean and the tops are a light golden brown.
