Ingredients:
- 1 cup (245g) pure pumpkin puree
- 1/2 cup (120ml) plain Greek yogurt
- 1/3 cup (80ml) maple syrup
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) melted coconut oil
- 2 cups (250g) spelt flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) baking powder
- 1 tbsp (6g) ground cinnamon
- 1/2 tsp (1g) ground nutmeg
- 1/2 tsp (3g) sea salt
- 3/4 cup (130g) dark chocolate chips
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
- In a large bowl, whisk together pumpkin puree, Greek yogurt, maple syrup, egg, vanilla, and melted oil until smooth.
- Sift in the spelt flour, baking soda, baking powder, cinnamon, nutmeg, and salt directly into the wet ingredients.
- Gently fold the dry ingredients into the wet using a spatula until no streaks of flour remain.
- Fold in the dark chocolate chips until evenly distributed.
- Pour batter into the prepared pan and bake for 60–65 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
