Ingredients:

  • 1/2 cup (40g) old-fashioned rolled oats
  • 1 cup (240ml) unsweetened almond milk
  • 1/4 tsp (1g) sea salt
  • 1/2 tsp (2g) ground cinnamon
  • 1 tbsp (16g) chia seeds
  • 1 tbsp (16g) almond butter
  • 1/2 cup (75g) fresh blueberries
  • 1 tsp (5ml) pure maple syrup
  • 1/4 tsp (1g) pure vanilla extract

Instructions:

  1. Combine the rolled oats, almond milk, salt, and cinnamon in a small saucepan over medium low heat.
  2. Bring the mixture to a gentle bubble. Note: Don't let it boil over.
  3. Reduce heat to low and stir occasionally for 5–8 minutes until the liquid is mostly absorbed and oats are velvety.
  4. Remove the pan from the heat immediately.
  5. Stir in the vanilla extract.
  6. Fold in the chia seeds and almond butter. Note: Stirring these in at the end preserves the nutrients in the oils.
  7. Pour the oatmeal into a bowl.
  8. Top with fresh blueberries.
  9. Drizzle the maple syrup over the berries.
