Ingredients:
- 1/2 cup (40g) old-fashioned rolled oats
- 1 cup (240ml) unsweetened almond milk
- 1/4 tsp (1g) sea salt
- 1/2 tsp (2g) ground cinnamon
- 1 tbsp (16g) chia seeds
- 1 tbsp (16g) almond butter
- 1/2 cup (75g) fresh blueberries
- 1 tsp (5ml) pure maple syrup
- 1/4 tsp (1g) pure vanilla extract
Instructions:
- Combine the rolled oats, almond milk, salt, and cinnamon in a small saucepan over medium low heat.
- Bring the mixture to a gentle bubble. Note: Don't let it boil over.
- Reduce heat to low and stir occasionally for 5–8 minutes until the liquid is mostly absorbed and oats are velvety.
- Remove the pan from the heat immediately.
- Stir in the vanilla extract.
- Fold in the chia seeds and almond butter. Note: Stirring these in at the end preserves the nutrients in the oils.
- Pour the oatmeal into a bowl.
- Top with fresh blueberries.
- Drizzle the maple syrup over the berries.
