Ingredients:
- 1.5 cups white whole wheat flour
- 1 tsp baking soda
- 0.5 tsp baking powder
- 1 tbsp ground cinnamon
- 0.5 tsp ground ginger
- 0.25 tsp ground nutmeg
- 0.5 tsp sea salt
- 1 cup pure pumpkin puree
- 0.5 cup unsweetened applesauce
- 0.5 cup pure maple syrup
- 1 large egg
- 2 tbsp extra virgin olive oil
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the pumpkin puree, applesauce, maple syrup, egg, olive oil, and vanilla until the mixture is smooth and glossy.
- Sift the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt directly into the wet mixture.
- Using a spatula, fold the ingredients together just until no streaks of flour remain; do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
