Ingredients:

  • 1.5 cups white whole wheat flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 1 tbsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.25 tsp ground nutmeg
  • 0.5 tsp sea salt
  • 1 cup pure pumpkin puree
  • 0.5 cup unsweetened applesauce
  • 0.5 cup pure maple syrup
  • 1 large egg
  • 2 tbsp extra virgin olive oil
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the pumpkin puree, applesauce, maple syrup, egg, olive oil, and vanilla until the mixture is smooth and glossy.
  3. Sift the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt directly into the wet mixture.
  4. Using a spatula, fold the ingredients together just until no streaks of flour remain; do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
