Ingredients:

  • 6 cups seedless watermelon, cubed into 1-inch pieces
  • 6 oz Greek feta cheese, crumbled
  • 1/2 cup red onion, very thinly sliced
  • 1/2 cup fresh mint leaves, torn
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze
  • 1 tbsp fresh lime juice
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Cube the chilled watermelon into uniform 1-inch pieces. Slice the red onion into paper-thin half-moons.
  2. In a small mixing bowl, whisk together the olive oil, balsamic glaze, lime juice, salt, and pepper until the mixture is thickened and glossy.
  3. Place the watermelon cubes and sliced red onion in a large shallow serving bowl or platter.
  4. Drizzle the dressing over the fruit and onion, tossing gently to coat.
  5. Fold in the crumbled feta cheese and torn mint leaves last to maintain their texture and color.
