Instructions:
- Cube the chilled watermelon into uniform 1-inch pieces. Slice the red onion into paper-thin half-moons.
- In a small mixing bowl, whisk together the olive oil, balsamic glaze, lime juice, salt, and pepper until the mixture is thickened and glossy.
- Place the watermelon cubes and sliced red onion in a large shallow serving bowl or platter.
