Ingredients:

  • 8 oz extra-sharp cheddar cheese, shredded
  • 1 cup all-purpose flour
  • 4 tbsp cold unsalted butter, cubed
  • 0.75 tsp fine sea salt
  • 2 tbsp ice cold water
  • 0.5 tsp onion powder
  • 0.5 tsp smoked paprika
  • 1 pinch cayenne pepper
  • 1 tsp flaky sea salt

Instructions:

  1. Place the all-purpose flour, sea salt, onion powder, and smoked paprika into a food processor. Pulse three times to aerate and combine the dry ingredients.
  2. Add the shredded extra-sharp cheddar cheese and cubed cold butter to the processor. Process for approximately 30 seconds until the mixture achieves the texture of coarse, orange sand.
  3. With the motor running on a low setting, drizzle in the ice cold water one tablespoon at a time. Stop processing as soon as the dough begins to clump together.
  4. Transfer the dough onto a sheet of parchment paper. Cover with a second sheet and roll with a rolling pin until the dough is paper-thin, approximately 1/16th of an inch.
  5. Use a pizza cutter or fluted pastry wheel to cut the dough into 1-inch squares. Use a wooden skewer or toothpick to dock a hole in the center of each square.
  6. Preheat oven to 375°F (190°C). Transfer the parchment paper with the crackers onto a baking sheet. Sprinkle with flaky sea salt and bake for 15 minutes or until the edges are golden brown and crisp.
