Ingredients:
- 8 oz extra-sharp cheddar cheese, shredded
- 1 cup all-purpose flour
- 4 tbsp cold unsalted butter, cubed
- 0.75 tsp fine sea salt
- 2 tbsp ice cold water
- 0.5 tsp onion powder
- 0.5 tsp smoked paprika
- 1 pinch cayenne pepper
- 1 tsp flaky sea salt
Instructions:
- Place the all-purpose flour, sea salt, onion powder, and smoked paprika into a food processor. Pulse three times to aerate and combine the dry ingredients.
- Add the shredded extra-sharp cheddar cheese and cubed cold butter to the processor. Process for approximately 30 seconds until the mixture achieves the texture of coarse, orange sand.
- With the motor running on a low setting, drizzle in the ice cold water one tablespoon at a time. Stop processing as soon as the dough begins to clump together.
- Transfer the dough onto a sheet of parchment paper. Cover with a second sheet and roll with a rolling pin until the dough is paper-thin, approximately 1/16th of an inch.
- Use a pizza cutter or fluted pastry wheel to cut the dough into 1-inch squares. Use a wooden skewer or toothpick to dock a hole in the center of each square.
- Preheat oven to 375°F (190°C). Transfer the parchment paper with the crackers onto a baking sheet. Sprinkle with flaky sea salt and bake for 15 minutes or until the edges are golden brown and crisp.
