Ingredients:
- 1.5 cups warm water (110°F/43°C)
- 1 tbsp granulated sugar
- 2.25 tsp active dry yeast
- 4.5 cups bread flour
- 2 oz unsalted butter, melted and cooled
- 2 tsp fine sea salt
- 9 cups water (for boiling bath)
- 0.5 cup baking soda
- 1 large egg, beaten
- 1 tbsp coarse pretzel salt
Instructions:
- In a stand mixer bowl, whisk warm water and sugar. Sprinkle yeast on top and let sit for 5 minutes until foamy.
- Add melted butter, fine sea salt, and bread flour. Use the dough hook to mix on low until incorporated, then increase to medium and knead for 3–5 minutes until the dough is smooth and clears the sides of the bowl.
- Turn dough onto a lightly floured surface and let it rest (relaxation rest) for 15 minutes.
- Divide dough into 8 equal pieces. Roll each into a 20-inch rope and use a bench scraper to snip into 1-inch bites.
- Bring 9 cups of water and 0.5 cup baking soda to a rolling boil. Boil bites in batches for 30 seconds, then remove with a slotted spatula to a prepared baking sheet.
- Brush the boiled bites with egg wash and sprinkle with coarse pretzel salt. Bake at 425°F (218°C) for 10-12 minutes until deep golden brown.
