Ingredients:

  • 6 whole Grade B vanilla beans
  • 1 cup 80-proof vodka

Instructions:

  1. Lay the vanilla beans flat on a cutting board. Using a sharp paring knife, split the beans lengthwise, leaving about an inch at the top intact to expose the seeds (caviar).
  2. Place the split beans into a clean 8 oz glass jar. If the beans are too tall, cut them into smaller 1-inch pieces.
  3. Using a funnel, pour the 80-proof vodka over the beans until they are completely submerged.
  4. Seal the jar tightly and shake vigorously. Store in a cool, dark place for a minimum of 8 weeks, shaking once per week.
