Ingredients:

  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp apple cider vinegar
  • 2 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 tsp ground allspice
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 habanero pepper, seeded and minced
  • 2 stalks green onion, chopped
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 lbs chicken wings, party-style
  • 1 tbsp neutral oil

Instructions:

  1. Combine all marinade ingredients (soy sauce, lime juice, apple cider vinegar, brown sugar, garlic, allspice, cinnamon, nutmeg, habanero, green onion, salt, and pepper) in a blender or food processor. Pulse until a thick, slightly textured paste forms.
  2. Toss chicken wings in a bowl or Ziploc bag with the marinade. Massage the paste into the skin and refrigerate for at least 30 minutes (up to 4 hours).
  3. For Air Fryer: Preheat to 380°F (193°C). Arrange wings in a single layer and cook for 12 minutes. Flip with tongs and cook for another 8–10 minutes until mahogany-colored and crisp.
  4. For Oven: Preheat to 400°F (204°C). Place wings on a wire rack over a baking sheet. Bake for 20 minutes, then broil on High for 3–5 minutes until edges are charred and bubbling.
