Ingredients:
- 1.5 cups (190g) whole wheat pastry flour
- 0.5 tsp (3g) baking soda
- 0.5 tsp (3g) baking powder
- 0.25 tsp (1.5g) salt
- 0.5 cup (100g) coconut sugar
- 1 large egg (50g)
- 0.33 cup (80ml) Greek yogurt
- 0.25 cup (60ml) coconut oil
- 1 tbsp (6g) lemon zest
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (5ml) vanilla extract
- 1.5 cups (225g) finely grated zucchini, squeezed dry
- 1 cup (150g) fresh blueberries
- 0.5 cup (60g) powdered sugar
- 1 tbsp (15ml) fresh lemon juice (for glaze)
- 0.5 tsp (1g) lemon zest (for glaze)
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
- Grate the zucchini finely. Place it in a clean kitchen towel and squeeze firmly to remove excess moisture before measuring 1.5 cups.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt until no clumps remain.
- In a large bowl, beat the egg and sugar until pale. Stir in the Greek yogurt, melted coconut oil, lemon zest, lemon juice, and vanilla extract until smooth.
- Gently fold the dry ingredients into the wet ingredients using a spatula, stirring only until just combined.
- Fold in the squeezed dry zucchini and the fresh blueberries.
- Pour the batter into the prepared loaf pan and bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
- While the bread cools, whisk together powdered sugar, lemon juice, and lemon zest to create the glaze.
- Drizzle the lemon glaze over the cooled loaf before slicing into 10 pieces.
