Ingredients:
- 3 cups (375g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 2 tbsp (18g) poppy seeds
- 1 cup (200g) granulated sugar
- ½ cup (115g) unsalted butter, melted and cooled
- 2 large eggs
- 2 tbsp (30ml) fresh lemon juice
- 1 tbsp (6g) lemon zest
- 2 cups (250g) shredded zucchini, squeezed dry
- 1 tsp (5ml) vanilla extract
- 1 cup (125g) powdered sugar
- 2 tbsp (30ml) fresh lemon juice
- ½ tsp (1g) lemon zest
Instructions:
- Preheat your oven to 350°F (175°C). Grease two 8x4 inch loaf pans thoroughly or line them with parchment paper.
- Grate the zucchini and use a clean kitchen towel to press out excess moisture to avoid a soggy loaf.
- Whisk the flour, baking soda, salt, and poppy seeds in a large bowl.
- In a separate smaller bowl, combine the melted butter, sugar, eggs, lemon juice, zest, and vanilla.
- Fold the wet ingredients into the dry until just combined, then gently stir in the shredded zucchini. Do not overmix.
- Divide the batter evenly between the two prepared pans and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the loaves cool in the pans for 10 minutes before transferring them to a wire rack.
- Whisk together the powdered sugar, lemon juice, and zest until smooth. Drizzle the glaze over the completely cooled loaves.
