Ingredients:
- 1 ½ cups (190g) white whole-wheat flour
- 1 tbsp (9g) poppy seeds
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 ½ cups (150g) grated zucchini
- ½ cup (120ml) maple syrup
- ⅓ cup (80ml) coconut oil
- 2 large (100g) eggs
- 2 tbsp (30ml) lemon juice
- 1 tbsp (6g) lemon zest
- 1 tsp (5ml) vanilla extract
- ¼ cup (30g) powdered sugar
- 1 tbsp (15ml) lemon juice
- ½ tsp (2g) lemon zest
Instructions:
- Grate the zucchini using the fine side of a box grater. Place the shreds in a clean kitchen towel and gently squeeze to remove excess water.
- In a large bowl, whisk together the maple syrup, oil, eggs, lemon juice, zest, and vanilla until the mixture is smooth and emulsified.
- Stir the grated zucchini into the wet mixture.
- Slowly fold in the flour, poppy seeds, baking soda, and salt using a spatula. Stir only until no streaks of flour remain.
- Pour the batter into a parchment-lined 9x5 inch loaf pan.
- Bake at 350°F (175°C) for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool completely before drizzling with the glaze made from powdered sugar, lemon juice, and lemon zest.
