Ingredients:
- 15 oz Libby’s 100% Pure Pumpkin
- 4 large eggs
- 1 cup vegetable oil
- 2/3 cup water
- 3 cups granulated white sugar
- 3.5 cups all-purpose flour
- 2 teaspoons baking soda
- 1.5 teaspoons fine sea salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 0.5 teaspoon ground cloves
- 0.5 teaspoon ground ginger
Instructions:
- Preheat oven to 350°F (180°C).
- Grease and flour two loaf pans. Ensure you get deep into the corners so the bread doesn't stick.
- Combine 15 oz Libby’s Pumpkin, 4 eggs, 1 cup oil, 2/3 cup water, and 3 cups sugar in a large bowl. Whisk until the mixture is smooth and vibrant orange.
- Whisk 3.5 cups flour, 2 tsp baking soda, 1.5 tsp salt, and all spices in a separate bowl.
- Slowly fold the dry ingredients into the wet base. Stop as soon as no white streaks of flour remain.
- Divide the batter equally between the prepared pans. Smooth the tops with a spatula for an even bake.
- Bake for 60 minutes at 350°F (180°C). You'll know it's ready when a tester comes out clean and the house smells like a spice shop.
- Cool in the pans for 10 minutes. This allows the structure to set so the loaf doesn't shatter when removed.
- Transfer to a wire rack. Let it cool completely until the bottom is no longer warm to the touch.
- Slice with a serrated knife. This preserves the velvety texture without squashing the loaf.
