Ingredients:

  • 15 oz Libby’s 100% Pure Pumpkin
  • 4 large eggs
  • 1 cup vegetable oil
  • 2/3 cup water
  • 3 cups granulated white sugar
  • 3.5 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1.5 teaspoons fine sea salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground ginger

Instructions:

  1. Preheat oven to 350°F (180°C).
  2. Grease and flour two loaf pans. Ensure you get deep into the corners so the bread doesn't stick.
  3. Combine 15 oz Libby’s Pumpkin, 4 eggs, 1 cup oil, 2/3 cup water, and 3 cups sugar in a large bowl. Whisk until the mixture is smooth and vibrant orange.
  4. Whisk 3.5 cups flour, 2 tsp baking soda, 1.5 tsp salt, and all spices in a separate bowl.
  5. Slowly fold the dry ingredients into the wet base. Stop as soon as no white streaks of flour remain.
  6. Divide the batter equally between the prepared pans. Smooth the tops with a spatula for an even bake.
  7. Bake for 60 minutes at 350°F (180°C). You'll know it's ready when a tester comes out clean and the house smells like a spice shop.
  8. Cool in the pans for 10 minutes. This allows the structure to set so the loaf doesn't shatter when removed.
  9. Transfer to a wire rack. Let it cool completely until the bottom is no longer warm to the touch.
  10. Slice with a serrated knife. This preserves the velvety texture without squashing the loaf.
