Ingredients:

  • 1.5 lbs (680g) cooked chicken breast, shredded
  • 1/2 cup (120g) plain Greek yogurt
  • 2 tbsp (30ml) fresh lemon juice
  • 1 tbsp (21g) honey
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) cracked black pepper
  • 1 cup (150g) red bell pepper, finely diced
  • 1/2 cup (60g) celery, thinly sliced
  • 1/4 cup (40g) red onion, minced
  • 1/2 cup (75g) fresh blueberries
  • 2 tbsp (10g) fresh parsley, chopped

Instructions:

  1. In a small bowl, whisk together the Greek yogurt, lemon juice, honey, salt, and pepper until the mixture is velvety and the honey is fully incorporated.
  2. Place the shredded chicken in a large mixing bowl. Pour the dressing over the chicken and fold gently with a spatula until every strand is evenly coated.
  3. Gently stir in the diced red pepper, celery, and red onion.
  4. Fold in the blueberries and parsley using a light touch to avoid crushing the berries.
  5. Optionally, chill the salad for 30 minutes before serving to allow flavors to meld.
