Ingredients:
- 3 large eggs
- 1/2 cup whole milk
- 1/4 cup heavy cream
- 3 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 8 thick slices Brioche or Challah bread
- 3 tbsp unsalted butter
- 1 tbsp neutral oil
Instructions:
- Whisk the eggs in a shallow dish until no streaks remain.
- Slowly stir in the milk, heavy cream, maple syrup, vanilla, cinnamon, and salt. Whisk vigorously until the cinnamon is evenly suspended and the mixture is a uniform pale gold.
- Place the bread slices into the custard and soak for 30 seconds per side for Brioche, or 60 seconds for denser, staler bread.
- Heat the butter and oil over medium heat until the butter foams and begins to smell nutty.
- Place the slices in the pan, leaving space between them to avoid steaming. Cook for 3–4 minutes per side until a deep golden-brown hue is achieved.
