Ingredients:

  • 3 large eggs
  • 1/2 cup whole milk
  • 1/4 cup heavy cream
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 8 thick slices Brioche or Challah bread
  • 3 tbsp unsalted butter
  • 1 tbsp neutral oil

Instructions:

  1. Whisk the eggs in a shallow dish until no streaks remain.
  2. Slowly stir in the milk, heavy cream, maple syrup, vanilla, cinnamon, and salt. Whisk vigorously until the cinnamon is evenly suspended and the mixture is a uniform pale gold.
  3. Place the bread slices into the custard and soak for 30 seconds per side for Brioche, or 60 seconds for denser, staler bread.
  4. Heat the butter and oil over medium heat until the butter foams and begins to smell nutty.
  5. Place the slices in the pan, leaving space between them to avoid steaming. Cook for 3–4 minutes per side until a deep golden-brown hue is achieved.
