Ingredients:
- 3 cups (270g) Old Fashioned Rolled Oats
- 1 cup (120g) Raw Pecans
- 1/2 tsp (3g) Sea salt
- 1 tsp (2g) Ground cinnamon
- 1/3 cup (80ml) Pure Maple Syrup
- 1/3 cup (80ml) Refined Coconut Oil, melted
- 1 tsp (5ml) Pure vanilla extract
- 1/2 cup (60g) Dried cranberries
Instructions:
- Preheat your oven to 325°F (165°C). In a large mixing bowl, combine the rolled oats, chopped nuts, sea salt, and cinnamon. Stir until the cinnamon is evenly distributed across the oats.
- Whisk together the melted coconut oil, maple syrup, and vanilla extract. Pour the liquid over the oat mixture and fold gently with a spatula until every oat is glistening and evenly coated.
- Spread the mixture onto a parchment-lined baking sheet, pressing it down firmly with the spatula to create a flat, condensed layer. Bake for 20–25 minutes, stirring only once halfway through to preserve the clusters, until the granola is a rich mahogany gold and smells nutty.
- Remove from the oven and immediately press the granola down again. Let it cool completely on the pan for at least 30 minutes. Once cold and hardened, break it into chunks and stir in the dried fruit.
