Ingredients:

  • 2 cups (250g) all-purpose flour
  • 3/4 cup (150g) granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1/2 cup (120ml) vegetable oil
  • 1/2 cup (120ml) whole milk
  • 1/4 cup (60g) Greek yogurt
  • 1 large egg
  • 2 tsp vanilla extract
  • 1.5 cups (255g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 375°F (190°C) and line your 12 cup tin with paper liners.
  2. In a large bowl, combine the 2 cups flour, 3/4 cup sugar, baking powder, soda, and salt.
  3. In a separate jug or bowl, whisk the 1/2 cup oil, 1/2 cup milk, 1/4 cup yogurt, egg, and 2 tsp vanilla until completely smooth and pale.
  4. Push the dry ingredients to the sides of the bowl to make a hole in the center.
  5. Pour the wet mixture into the well.
  6. Use a spatula to stir until just barely combined with a few streaks of flour remaining.
  7. Toss in the 1.5 cups chocolate chips. Stop as soon as they are distributed.
  8. Divide the batter evenly, filling each cup about 3/4 of the way full.
  9. Slide the tin into the center rack for 20 minutes until the tops are golden and spring back when touched.
  10. Let them sit in the tin for 5 minutes before moving to a wire rack.
