Ingredients:
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp fine sea salt
- 1/2 cup (120ml) vegetable oil
- 1/2 cup (120ml) whole milk
- 1/4 cup (60g) Greek yogurt
- 1 large egg
- 2 tsp vanilla extract
- 1.5 cups (255g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 375°F (190°C) and line your 12 cup tin with paper liners.
- In a large bowl, combine the 2 cups flour, 3/4 cup sugar, baking powder, soda, and salt.
- In a separate jug or bowl, whisk the 1/2 cup oil, 1/2 cup milk, 1/4 cup yogurt, egg, and 2 tsp vanilla until completely smooth and pale.
- Push the dry ingredients to the sides of the bowl to make a hole in the center.
- Pour the wet mixture into the well.
- Use a spatula to stir until just barely combined with a few streaks of flour remaining.
- Toss in the 1.5 cups chocolate chips. Stop as soon as they are distributed.
- Divide the batter evenly, filling each cup about 3/4 of the way full.
- Slide the tin into the center rack for 20 minutes until the tops are golden and spring back when touched.
- Let them sit in the tin for 5 minutes before moving to a wire rack.
