Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (8g) pumpkin pie spice
- 1 tsp (5g) baking soda
- ½ tsp (2g) baking powder
- ½ tsp (3g) salt
- 1 can (15 oz / 425g) pureed pumpkin
- ½ cup (120ml) vegetable oil
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan with butter or oil, then lightly dust with flour or line with parchment paper.
- In a large bowl, whisk together the flour, sugar, pumpkin pie spice, baking soda, baking powder, and salt until no clumps remain.
- Create a well in the center of the dry ingredients and pour in the pumpkin puree, vegetable oil, eggs, and vanilla extract.
- Using a spatula, fold the mixture together until just combined; do not overmix.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 55-65 minutes, or until the edges pull slightly from the pan and a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
