Ingredients:

  • 3 large eggs
  • 1 cup vegetable oil
  • 2 cups brown sugar, packed
  • 1 tsp vanilla extract
  • 3 cups grated zucchini
  • 3 cups all-purpose flour
  • 1 tbsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts
  • 1/2 cup semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease two 8x4 inch loaf pans with butter or non-stick spray, and line the bottoms with parchment paper.
  2. In a large bowl, whisk together the eggs, vegetable oil, brown sugar, and vanilla extract until the mixture is smooth and the sugar has begun to dissolve.
  3. Fold in the grated zucchini using a spatula until well combined.
  4. Sift the all-purpose flour, ground cinnamon, baking soda, and salt directly into the wet ingredients.
  5. Gently stir with a spatula just until no streaks of white flour remain. Do not overmix.
  6. Fold in the chopped walnuts and semi-sweet chocolate chips.
  7. Divide the batter evenly between the two prepared loaf pans.
  8. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pans for 10 minutes before transferring to a wire cooling rack.
