Ingredients:
- 3 large eggs
- 1 cup vegetable oil
- 2 cups brown sugar, packed
- 1 tsp vanilla extract
- 3 cups grated zucchini
- 3 cups all-purpose flour
- 1 tbsp ground cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chopped walnuts
- 1/2 cup semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease two 8x4 inch loaf pans with butter or non-stick spray, and line the bottoms with parchment paper.
- In a large bowl, whisk together the eggs, vegetable oil, brown sugar, and vanilla extract until the mixture is smooth and the sugar has begun to dissolve.
- Fold in the grated zucchini using a spatula until well combined.
- Sift the all-purpose flour, ground cinnamon, baking soda, and salt directly into the wet ingredients.
- Gently stir with a spatula just until no streaks of white flour remain. Do not overmix.
- Fold in the chopped walnuts and semi-sweet chocolate chips.
- Divide the batter evenly between the two prepared loaf pans.
- Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pans for 10 minutes before transferring to a wire cooling rack.
