Ingredients:
- 2 cups (250g) zucchini, grated
- 1 cup (110g) carrots, finely shredded
- 1/2 cup (60g) apple, peeled and finely diced
- 1/2 cup (75g) raisins or dried cranberries
- 1/2 cup (60g) shredded coconut, unsweetened
- 1/4 cup (30g) walnuts or pecans, chopped
- 3/4 cup (150g) brown sugar, packed
- 1/2 cup (115g) neutral oil
- 1/4 cup (60g) unsweetened applesauce
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) baking powder
- 1 tbsp (6g) ground cinnamon
- 1/2 tsp (3g) salt
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
- Grate the zucchini and carrots. Place the zucchini in a clean kitchen towel and squeeze firmly over the sink until most of the liquid is gone. Note: Too much water leads to a gummy center.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. Stir until no lumps remain.
- In a separate large bowl, beat the eggs and brown sugar until pale. Whisk in the oil, applesauce, and vanilla until the mixture is silky and combined.
- Fold the dry flour mixture into the wet ingredients using a spatula. Stir only until just combined.
- Gently fold in the squeezed zucchini, shredded carrots, diced apple, raisins, coconut, and nuts.
- Transfer the batter to the pan and smooth the top with your spatula.
- Bake for 55–65 minutes until a toothpick comes out clean with a few moist crumbs.
- Let the loaf cool in the pan for 10 minutes.
- Transfer to a wire rack and cool completely (about 1 hour) until the loaf feels firm to the touch.
