Ingredients:
- 1 tbsp (15ml) Olive oil
- 1 tbsp (15g) Unsalted butter
- 8 oz (225g) Cremini or Baby Bella mushrooms, thinly sliced
- 1 small (50g) Shallot, finely minced
- 2 cloves (6g) Garlic, minced
- 1 tsp (5ml) Fresh thyme leaves
- ½ tsp (3g) Salt
- ¼ tsp (1g) Black pepper
- 2 oz (55g) Cream cheese, softened to room temperature
- ½ cup (50g) Gruyère cheese, shredded
- 2 tbsp (30ml) Heavy cream
- Pinch (0.5g) Nutmeg
- 1 sheet (approx. 250g) Puff pastry, thawed
- 1 large (50g) Egg, beaten
Instructions:
- Heat the olive oil and butter in a skillet over medium-high heat.
- Add the sliced mushrooms in a single layer and sear for 3-4 minutes without stirring to develop a deep brown color.
- Stir in the minced shallots and garlic, cooking for another 2-3 minutes until translucent.
- Stir in the thyme, salt, and pepper, then remove from heat and let cool slightly.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the thawed puff pastry and cut into 6 equal rectangles (roughly 3x4 inches).
- Place rectangles on the baking sheet and lightly score a border about ½ inch from the edge without cutting through.
- Brush the scored border with the beaten egg wash.
- In a small bowl, mix the softened cream cheese, shredded Gruyère, heavy cream, and nutmeg.
- Spread the cream cheese mixture inside the scored borders of the pastry and top with the sautéed mushroom filling.
- Bake for 15-20 minutes until the pastry is golden brown and puffed.
